O.M.G!! This was a very pleasant surprise! Especially since many of the recipes I've tried so far have required turning on the stove and/or are soups. The fact that this dish can be served hot or cold is a nice option. This dish cold is delicious!! Also, as you'll see in the ingredient list, I basically flipped this recipe on its head!
Interesting facts about Cabo Verde:
- The country is made up of 9 inhabited islands, and one that is not.
- The country has two names - "Cabo Verde" (Portuguese) and "Cape Verde" (English).
- The country is regarded as one of the safest countries in Africa.
Grao de Bico com Atum
1 1/2 lbs of white potatoes (about 7 medium potatoes), peed and chopped in large equal pieces (I had left over mini potatoes and sweet potatoes, so I just used those up)
3 tsp salt
1/2 tsp ground white pepper (I used black pepper)
1/2 cup diced red onion (about a quarter of a medium onion (I used 1 whole regular onion)
3 large eggs (I didn't use any eggs)
1/2 cup green olives (roughly 15) (I used a full can of black olives)
3 cans of quality tun in oil (I used tuna in water)
1 can chickpeas, drained and washed
1/3 cup fresh parsley, chopped (I didn't use parsley)
1/2 cup extra virgin olive oil
1/2 cup red wine vinegar
1. Place the potatoes in a large pot on the stove.
2. Add water to the pot, about two inches above the potatoes.
3. Add 2 tsp of salt.
4. Add the three whole eggs.
5. Cover and bring to a boil.
6. Uncover, reduce the heat to medium high and continue to simmer uncovered until the potatoes are tender and you can easily pierce the potato with a fork (about 20 minutes once it starts to boil). Note: remove the eggs after about 10 minutes of simmering.
7. Cool the eggs off and peel them. Chop them (you can leave one out to cut for garnish).
8. Cube the potatoes and place in a large bowl.
9. Gently place all the ingredients, including 1 tp. of salt and 1/2 tsp white pepper in the bowl with the potatoes (except for the one egg and some parsley for garnish).
10. Gently mix all the ingredients and transfer to a large serving dish.
11. Garnish with egg and parsley.
12. Serve this dish hot or cold. Enjoy!
