Albania - Tave Me Presh

Now that I have room in my freezer again, I made Tave Me Presh, a traditional ground beef and leek casserole from Albania! Instead of ground beef, I used ground turkey. I also guestamated and used 1/2 teaspoon of both salt and pepper since the recipe didn't specify. This was a super easy dish to prepare and even easier cleanup!

While cooking, I listened to traditional Albanian music.  

 

Tave Me Presh

Serves 4, Prep time: 20 minutes (if the meat is already browned), Cook time: 1 hour        

Ingredients:

  • 2 lb leeks (mostly white parts) - I used 3 large stalks
  • 1 lb ground beef
  • 1 onion, finely chopped
  • 2 tablespoons tomato sauce
  • 1 red bell pepper, finely chopped
  • 1 cup beef stock
  • Vegetable oil - to saute
  • Salt - I used 1/2 tsp
  • Pepper - I used 1/2 tsp

Preparation:

If you're like me and pretty novice to the kitchen, you have no idea what a leek looks like! Here it is! They come in a bunch of 3-4 stalks. Since the white parts are used for this dish, I chopped up the green and leafy parts and I'll throw it in my crockpot of chili for tomorrow's dinner.

1. Saute the leeks in a little oil for 8-10 minutes. Lay on baking dish.
 
2. Saute the onion in a little oil until translucent. Add ground beef and continue to cook for a few minutes.
 
3. Add the beef stock, tomato sauce, red bell better, salt and pepper. Bring to a boil.
 
4. Pour the meat mixture over the leeks.
 
5. Bake in a pre-heated oven at 350 degree F for at least 1 hour. You can leave in the oven for another 10-15 minutes if you prefer the dish more consistent with a little less sauce. 

 

**Some notes!

  • If I make this again, I think I would double it, just to have a few more meals on hand and in the freezer.
  • I served this delicious casserole on a bed of spinach... excellent decision!
