This dish was very simple, in every way. But that is probably very indicative of the way people live in Burundi. You can do a lot with this dish - serve it over rice, a bed of greens, add some vegetables to the mixture, be creative!
Interesting facts about Burundi:
- The three stars on the Burundi flag represent the three main ethnic groups - Tutsi, Hutu, and Twa - also representing the national moto, "unity, work, progress."
- Burundi has the fifth worst fixed broadband internet speed of 6.04 Mbps. (For reference, Cuba has the worst speed in the world with 2.92 Mbps; Singapore has the best speed of 284.13 Mbps, the United States has 254.01 Mbps)
- To support my comment that I opened with, Burundi only has a 6% obesity rate, and unfortunately is ranked the most undernourished (hungry) country in the world, according to the Global Hunger Index.
I listened to some traditional music from Burundi while I cooked.
Beans and Bananas
1 lb. dried red kidney beans
4 green bananas or plantains
2 tablespoons oil
1 onion, sliced or diced
Salt to taste
Pepper to taste
Hot chile pepper to taste (I used chile powder)
1. Soak the beans for at least 3 hours in plenty of water.
2. Drain, place in pan, cover with plenty of water and boil for 40 minutes or until tender. Drain.
3. Peel and chop the bananas then add the oil to a pan and brown the onions.
4. Add in the beans and bananas to the oil and season with salt and pepper and chile.
5. Add 4 cups of water and simmer until the beans are completely cooked and the liquid has reduced to about one cup.
6. Serve hot and enjoy!
