I wasn't really in the mood to search for a new recipe this week and I knew that I needed to consume some vegetables (since this week didn't contain that much). Luckily I found this recipe quickly. I feel a little bad because it doesn't seem all that unique. But I did add some things to make it mine. For example, I put this mixture on a bed of quinoa. This was a great add! I also added 2 cans of black beans. Again, another great add! I was afraid this would be a pretty bland meal, but it was actually pretty good! I didn't add the salt or pepper, but instead, just a blended spice mixture, which was great. I suppose you could do any spice, even a curry powder could make it interesting.

- Chobe National Park has the largest population of African elephants.
- Botswana is about the size of France, but only has 2 million people.
- The border between Botswana and Zambia is the shortest in the world - 150 meters! (For reference, it takes about 107 seconds to walk 150 meters!)
- Taylor Swift shot her music video "Wildest Dreams" in the Makgadikgadi Salt Pans.

Botswanan Stewed Spinach Greens
1 lb. baby spinach
1 large onion, sliced thinly (I used two smaller onions and diced them)
vegetable oil
salt (As mentioned earlier, I left the salt and pepper out and added my own seasonings)
pepper
I also added 2 cans of black beans
1. Add all ingredients to a large skillet or wok. Cover and heat over medium-low, stirring occasionally. Cook for about 30 minutes, or until all vegetables are soft. Serve hot.
