Belarus - Belarusian Green Beans and Potatoes Soup

This was delicious! I was skeptical of the sauerkraut, but it was pretty tasty! I would definitely recommend.

Did you know....

  • Pancake Week is celebrated in Belarus the last week before Lent. Topping options are vast - from ground poppy seeds sweetened with sugar to mushroom stew. I could get on board with this tradition!
  • Potatoes are a staple in the Belarusian cuisine. I'm not surprised - it was a challenge to find a "healthy" recipe from Belarus (meaning not fried and/or with sugar added).
  • Belarusians celebrate Christmas twice - December 25 (Catholic) and January 7 (Orthodox) - both are national holidays.

I listened to some Belarusian music while I cooked.

 

Belarusian Green Bean and Potatoes Soup


2 tablespoons olive oil

1 cup onion, chopped

1 clove garlic, smashed (I used 1 tsp of minced garlic)

6 cups of vegetable broth (I used chicken bouillon broth)

15 ounces sauerkraut, undrained

16 ounces frozen green beans, chopped

2 pounds red potatoes, chopped (This equates to 4 medium or 6 small)

1/3 teaspoon salt

1/4 teaspoon pepper

8 ounces of sour cream (I used 1 cup of plain Greek yogurt)

2 tablespoons flour


1. In stock pot, heat oil.

2. Add onions, cook until translucent.

3. Add garlic and season with salt and pepper

4. Add potatoes, sauerkraut and green beans and stock.

5. Simmer for 30 minutes.

6. Add flour to sour cream and add to soup.

7. Cook until thickened.

8. Season to taste.
